If you want to gravity feed your beer you dispense beer out the gas in post (Attached to a picnic tap to a gas in disconnect.).  Tip the keg head down so the long dip tube is now sticking up into the head space that's now at the foot of the keg which is higher in elevation than the head.  I think Dave Sapsis has the ESB kegs at about a 45 deg angle.  Also the gas in post with picnic tap should be at the lowest point and the normal beer out post should be on the top (elevated higher that the gas in post.).  Finally attach a beer out disconnect to the beer out post.  The beer out disconnect is not connected to anything!  This allows air to flow up the long dip tube into the head space as you dispense out the bottom gas out post.

 

If you're going to use this method you need to drink the beer very fast!  Like at a party or some other get together with plenty of beer drinkers.

 

If you search the web you find that you can put a breather on the keg (beer out line that's supplying head space) that allows very low pressure CO2 to back fill the head space.  But the breather does not allow enough CO2 as to carbonate the beer.  The real breathers are expensive.  But there are web articles by homebrewers showing how to use a "NEW" low pressure propane regulator for $10 or $20 to do the same thing.  Google is your friend!

Sounds right to me.
Obviously with this setup, you'll need to worry about oxidation. You could put nitrogen on the gas line with a low pressure to aleviate oxidation concerns; CAMRA would probably consider this "cheating"!

You only need a beer engine if you need to pump the beer up to the serving location (e.g. when the beer is in the cellar). Although a beer engine would give you the benefit of the sparkler, the little nozzle on the end which, I believe, ends up forcing the dissolved CO2 out of solution, making a nice head.

        Brattstrom may have told me this one already, but I forgot.  If I want to make and serve cask beer, I would rack from primary to a keg and allow to carbonate (I assume you prime it).  Then lay the keg on itʼs side, but keep the gas post elevated above the beer in the keg.  Attach and air hose to t he gas post and a picnic tap or other dispenser to the liquid out.  Is that it?  And the only difference between this and a firkin is that a firkin is a specific quantity (10 gallons?)?
